Allergy friendly snack bars
Anybody with allergy kids, knows how difficult it is to find decent snacks, that don’t contain a tonne of sugar and salt (and that the kids will actually eat) our littlest love, Edie, is allergic to nuts and dairy and also suffers with gut sensitivities so we try to keep things like gluten to a minimum. I was looking up recipes for nut free muesli-type bars yesterday and thought today, being an indoors day (thanks to Melbourne weather) was a great opportunity to try one out!
These bars can be made with whatever seeds, dried fruit, chocolate chips etc you prefer!
INGREDIENTS
100g honey, maple or rice malt syrup
100g butter or nuttelex
1 TBSP brown sugar
50ml water
150g oats
30g rice bubbles
30g flour (I used buckwheat, you can use regular)
10g desiccated coconut (optional)
25g seeds ( I used sunflower kernels, pepitas and chia seeds
25g dried fruit (optional) I used some dried apricot
75g of chocolate chips (optional – I omitted)

METHOD
Preheat oven to 180degrees celcius and line a square baking tray with baking paper.
Combine Honey and butter/nuttelex in a jug and melt in microwave (can also do on stovetop if preferred) then stir in sugar & water.
Combine all remaining ingredients in a mixing bowl and pour over butter mixture and stir through.
Spoon mixture into pan, and use a second sheet of baking paper to cover so that you can use your hands to press down gently but firmly, compacting the mixture as much as possible.
Bake for 20 minutes at 180 deg, then remove and cool a little before placing in freezer for 1 hour (very important step to ensure your bars don’t crumble!)
After removing from freezer, chop up into bars and store in fridge for up to 5 days, or in the freezer.
