Gluten Free Carrot Muffins
Those of you who eat gluten free have no doubt eaten many a dry, dense and frankly, depressing gluten free muffin. I know I have, while trying and testing out new recipes for yummy, healthy(ish) snacks, so I was pleasantly surprised to come across this carrot muffin recipe. These muffins are just the right amount of sweet, suuuuuper moist and fluffy and are a favourite among our kids and us!
You can adjust the sugar to your desire, I only add the half cup and I find it sweet enough but if you prefer more, you can add a full cup. The original recipe also calls for vegetable oil, but I replaced it with Olive and found it made no difference to the flavour.
INGREDIENTS
1/2-1 cup of brown sugar
2 eggs
3/4 cup Olive or vegetable oil
1 cup GF plain flour
1 TSP baking powder
1/2 TSP baking soda
1/2 TSP salt
1 TSP cinnamon
1 TSP Vanilla extract
1 1/2 cups shredded carrot
1/2 cup sultanas
METHOD
Preheat oven to 180degrees celcius and grease/oil spray a 12 hole muffin tray.
To a medium mixing bowl, add eggs and sugar and cream with an electric mixture until smooth, then add oil and continue mixing until all combined.
Combine all flour, powders and salt and sift into wet ingredients, then stir gently until blended
Stir in carrot, sultanas and vanilla.
Spoon into muffin tray and bake for 25 mins, or until a skewer inserted, comes out clean. Cool on a wire rack.
